Galangal (Alpinia Galanga) is a rhizome in the same family as ginger and is commonly referred to as Thai ginger. From a more ancient part of the world, galangal has a very unique flavor profile. The rock hard rhizome has a palatable piney taste backed by citrusy, and peppery notes. Of the three rhizomes on the farm, galangal is the hardiest of the trio, developing dense, and verdant foliage. Early in the season, the crop has a pure white meat with a beautiful pink blush on the outer layers. A personal favorite, I love the punch galangal packs in Thai Coconut chicken soup (Tom Kha Gai).
